Royer Mountain Cheese received a “Best in Show” and “First Prize” in the semi-hard and hard cheese category at the Pennsylvania Farm Show cheese competition in January 2018. The judges agreed that this cheese deserved recognition for its spectacular taste and flavor. This stand alone cheese takes you on a full-bodied flavor trip that begins with a smooth creamy texture and closes with a sharp pungent burst of flavor. Royer Mountain is an Alpine cheese that is made by Clover Creek Cheese Cellar. It shares the twin Italian flavors of Parmesan and Romano that together foretell mountain breezes gently sweeping through cool green pastures. It is handcrafted from fresh, high quality, cultured raw cow’s milk, salt, and rennet, and cellar-aged for nineteen months. The aging process maximizes the levels of acid and beneficial bacteria in the cheese. The cheeses are turned weekly with a keen constant eye on the temperature of the cellar which results in a delicious, pampered cheese.
Grate this cheese over pizza or any of your favorite Italian dishes to give them a unique double flavor sensation. It is also a pleasing addition to breadcrumb mixtures for sauteed meats and vegetables. Sprinkle over salads and seafood pasta for that last memorable touch of rich flavor. Royer Mountain is simply delicious grated liberally over fresh hot popcorn cooked in olive oil on the stove and topped with a dash of cracked pepper.
