Silver Lake is an Alpine style cheese that mimics the luscious flavor, texture, and melting characteristics of a Swiss Gruyere or French Comte. Named for a local lake near the creamery in Perry, New York, Silver Lake is often referred to as “the favorite.” It starts out big, like a Comte or Gruyere, in 60 pound wheels that are cave-aged on wood boards. The wheels are in the cave for at least a year to allow them to mature to bring out their finest and fullest flavors.
The first wheels to reach maturity and depart the cave express subtle notes of toasted hazlenuts, rich brown butter, and warm cooked milk. When Silver Lake is left to age it mellows into a heavenly, slightly onion-y taste.
East Hills Creamery’s Silver Lake captures the essence of raw, pasture-fed cow’s milk. Their 60 head pampered cheese herd produces the high quality milk that is the foundation for Silver Lake. Their cows graze on the a mixture of indigenous grasses and other plants, including rye grass, white clover, blue grass, chicories, dandelions, daisies, and red clover. The natural grazing on the medley of grasses produces unique subtle flavors to their cheeses.
Silver Lake is delicious on its own, on a cheeseboard, or melted in a grilled cheese between thick slices of bread. It reaches its peak flavor when melted on top of French onion soup. But, put Silver Lake in a Croque-Monsieur (baked ham and cheese with velvety bechamel oozing out all over the place) and you will discover a life-changing addition to your culinary repertoire.
