The beautiful warm gold color and wonderful caramel sweetness comes from the interlaced fusion of flavors attributed to the sweet summer grasses of Central Pennsylvania. That is why Old Gold Gouda is only made during the summer months when their herd of Jersey cows are lumbering serenely and content through the pastures. The natural milk from pasture fed cows is the key ingredient to Old Gold with the rich gold color coming from the Beta-carotene found in summer grasses. Add natural veal rennet, salt, cultures and at least a year of aging and Old Gold Gouda will be ready to assail your senses with its earthy aroma and lingering sharp taste.
Old Gold is a semi-hard, artisan, cheese with a compact, crumbly, dense yet springy texture. Gouda originated in the Netherlands where it was commonly used to richen soups and sauces. It is wonderful as a final addition sprinkled over a hot pizza straight out of the oven.
